Birthday Cake Cookies

i would really hate to know how long i’ve worked on this recipe. I’m a sucker for a classic sugar cookie. I wanted something similar, but richer and sweeter. With a combination of different flavorings I think i’ve found EXACTLY what i want. I won’t make a single promise though that this recipe won’t change slightly over the years. I’ll always be chasing a very specific flavor I have in mind.

  • BIRTHDAY CAKE COOKIES

  • 1 c. butter, softened (Mine is usually even partially melted, because I forget to set it out ahead of time)

  • 1 c. sugar

  • 1/2 c. brown sugar

  • 2 eggs

  • 1 tsp cake batter extract** (note below)

  • 1/2 tsp almond extract

  • 1/2 tsp vanilla

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 1/2 c. flour

  • 1/4 c. cornstarch

  • In a stand mixer, cream together butter and both sugars until incorporated. Add in eggs and flavorings. Into the wet mixture add cornstarch, salt, baking soda and powder, and flour. Preheat oven to 350°. Scoop out cookie dough. Chill dough for approximately 30 minutes before baking, or even just while oven preheats. (See note below about chilling) Bake for 9-11 minutes. Cool on rack.

  • For all my cookie recipes they are scooped with a large 1 1/2 TBSP cookie scoop. This may affect baking time if you use a different size than I do.

  • Don’t hate me if I mention chilling the cookie dough before baking in all my recipes. It truly makes a huge difference on shape and texture. I’m a sucker for a thick gooey cookie with crispy edges. The combination of cornstarch and chilling helps me get the perfect cookie every time. You can choose not to chill them, the cookies may just spread a little bit more is all. I’ve also chilled my dough for up to 24 hours before, depending what time I have available and when I need the dough by.

  • **I found the cake batter extract at Walmart. I really like using it in certain recipes for fun. Leaving it out won’t make or break this recipe at all. It’s completely understandable not wanting to buy a flavoring for one recipe.

  • Almond extract can be overpowering very easily. I only like it in small quantities, I do not want it to be a stand out flavor. Feel free to add a few extra drops if you really like it! Almond extract is most commonly used in white cake to get the flavor we all love so much in wedding and graduation cakes.

THese Would be so good to make Ice Cream SANDWICHES out of! It would be easy to make a bunch of SANDWICHES and freeze them for a bbq or party.

When i think of funfetti i think of a boxed cake mix. using a funfetti cake mix is my favorite flavor of cake mix cookies. it’s a very sweet flavor, different from a sugar cookie. THat’s the inspiration. a lot of recipes are named funfetti and it is a classic sugar cookie with sprinkles, which there is ABSOLUTELY nothing wrong with! I just want to have two different flavors of cookies in my arsenal of recipes, a classic sugar and a funfetti.
